Tiramisu'

Without liquor or dark chocolate

INGREDIENTS

400 g ladyfingers (savoiardi)
500 g mascarpone cheese
2 large eggs (separated)
100 g granulated sugar
1 cup strong coffee, cooled (espresso is ideal)
Unsweetened cocoa powder for dusting

HOW TO MAKE TIRAMISU’

Prepare the Coffee:
Brew the coffee and let it cool to room temperature.
Make the Mascarpone Mixture:
In a mixing bowl, whisk the egg yolks and sugar together until the mixture is thick and pale, about 5 minutes.
Add the mascarpone cheese to the egg yolk mixture and gently fold until smooth and well combined.
Whip the Egg Whites:
In another clean bowl, whisk the egg whites until stiff peaks form.
Gently fold the whipped egg whites into the mascarpone mixture, being careful not to deflate the egg whites.

 

Assemble the Tiramisu:
Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them for too long, as they can become too soggy.
Arrange a layer of the dipped ladyfingers in the bottom of a 9×13 inch (or similar size) dish.
Spread half of the mascarpone mixture over the layer of ladyfingers.
Repeat the process with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
Chill:
Cover the dish with plastic wrap and refrigerate for at least 4 hours, but 24 hours is ideal. This allows the flavors to meld beautifully.
Serve:
Before serving, dust the top generously with cocoa powder.
Cut into squares and serve chilled. The waiting period really enhances the flavor of the tiramisu!
